I think this sounds totally delicious. I don't know if you were following "The Next Great American Restaurant" (I do not recommend you do) but there was a guy there who wanted to open a chain of grilled cheese places, and the "Investors" (including Curtis Stone and Bobby Flay) were so against it. They thought no one would go for it. The guy didn't win, and it makes me sad.
